5-Min Creamy Blender Vegan Queso

A silky, gently spicy cashew queso blended with mild green chiles and nutritional yeast. It comes together in minutes and is perfect for dunking chips, drizzling over tacos, or making nachos.

Instructions

Step 1: Optional: soften the cashews

If not using a high-speed blender, soak the raw cashews in boiling water for 15 minutes to soften, then drain well.

Step 2: Load the blender

Add the cashews, unsweetened soy milk, the 4.5oz (127g) of diced green chiles, nutritional yeast, red pepper flakes and the salt to the blender jar.

Step 3: Blend until ultra-smooth

Blend on high, scraping down the sides as needed, until the queso is completely smooth and creamy, about 1–2 minutes.

Step 4: Adjust and serve

If needed, blend in a splash more soy milk for a thinner texture. Taste and adjust the salt or heat, then serve warm with chips or over nachos.

  • ½ tsp of red pepper flakes
  • ½ tsp of salt
