
Crispy Buffalo Cauliflower Bites
Crispy, oven-baked cauliflower bites coated in a fiery buffalo sauce. They are crunchy on the outside, tender on the inside, and perfect for game day snacking, especially when dunked in cool vegan ranch.
Instructions
Step 1: Heat the oven and prep pan
Preheat the oven to 450°F (230°C). Line a large baking sheet with parchment paper.
Step 2: Make the batter
In a large bowl, whisk together the soy milk, all-purpose flour, cornstarch, garlic powder, onion powder, half of the salt and half of the black pepper until smooth.
Step 3: Season the breadcrumbs
In a second bowl, combine the panko breadcrumbs with the remaining salt and black pepper and toss to distribute.
Step 4: Coat the cauliflower
Add cauliflower florets to the batter and stir to coat thoroughly, letting excess drip off.
Step 5: Bread the florets
Transfer battered florets in batches to the breadcrumb bowl and gently turn until evenly coated on all sides.
Step 6: First bake
Arrange coated florets on the prepared pan in a single layer. Bake for 20 minutes, until lightly crisped.
Step 7: Toss with buffalo sauce
Move the baked florets to a large bowl, add the vegan buffalo sauce, and toss until every piece is coated.
Step 8: Finish baking and serve
Return the sauced florets to the pan and bake for 10 minutes more to set the glaze. Serve hot, sprinkled with the chopped chives and the vegan ranch on the side for dipping.
