
Fluffy Garlicky Vegan Mashed Potatoes
Ultra-creamy mashed potatoes infused with garlic and onion powder. They are fluffy, buttery, and finished with warm milk for the ultimate comforting side dish.
Instructions
Step 1: Prep the potatoes
Peel the potatoes if you prefer a smooth mash, or scrub them clean for a rustic texture. Cut each potato into even quarters.
Step 2: Cook until tender
Add potatoes to a large pot and cover with cold water by 1–2 inches (2.5–5cm). Bring to a boil, then cook until fork-tender, about 12–16 minutes.
Step 3: Drain and dry
Carefully drain in a colander, then return potatoes to the warm pot to steam off excess moisture for 1–2 minutes.
Step 4: Mash the potatoes
Mash directly in the pot with a potato masher until mostly smooth (small lumps are fine).
Step 5: Warm the milk and spices
In a small saucepan, whisk together the soy milk, garlic powder and onion powder. Add the vegan butter and melt over medium-low heat, simmering for about 2 minutes.
Step 6: Combine and adjust
Pour the warm butter mixture over the potatoes and fold until creamy. If needed, add a splash more warm non-dairy milk for looser texture.
Step 7: Season and serve
