Grill-Ready Walnut Chickpea Burgers

Hearty, grill-ready vegan patties made from walnuts, chickpeas, and chewy vital wheat gluten. They hold their shape perfectly over fire and are best served with a smoky BBQ glaze.

Instructions

Step 1: Crush the walnuts

Add the walnuts to a food processor and pulse to a coarse crumb. Scrape into a large mixing bowl.

Step 2: Blend chickpeas with sauces

To the empty processor, add the drained chickpeas, soy sauce and tomato paste. Process until mostly smooth, scraping down the sides as needed. Transfer to the bowl with the walnuts.

Step 3: Season the mixture

Stir in the vegan mayonnaise, hoisin sauce, Dijon mustard, garlic powder, onion powder, the ½ tsp of salt, black pepper, smoked paprika and liquid smoke until evenly combined.

Step 4: Add couscous and gluten, then knead

Mix in the cooked couscous and vital wheat gluten. Use clean hands to bring the mixture together, then knead for 1–2 minutes (about 20–30 turns) to activate the gluten and make the dough springy.

Step 5: Shape the patties

Divide the mixture into 4 equal portions. Form each into a firm, flat patty (use a round cutter for even edges if you like).

Step 6: Pan-fry with BBQ baste

Heat the olive oil in a skillet over medium-high heat. Add the patties and brush the tops with half of the vegan BBQ sauce. Cook 5 minutes, flip once, brush with the remaining sauce and cook 4–5 minutes more until browned.

Step 7: Or grill instead

Lightly oil the grill grates. Place patties on the hot grill and brush generously with the BBQ sauce. Grill about 5 minutes per side until well-marked and heated through.

Step 8: Assemble and serve

Layer patties on hamburger buns with lettuce, tomato, pickles, avocado and red onion. Add vegan thousand island dressing if using and serve hot.

  • 1 cup of walnuts
  • 425g of chickpeas (drained)
  • 1 tbsp of soy sauce
  • 2 tbsp of tomato paste
  • 1 tbsp of vegan mayonnaise
  • 1 tsp of hoisin sauce
  • 1 tsp of dijon mustard
  • ½ tsp of garlic powder
  • ½ tsp of onion powder
  • ½ tsp of salt
  • ¼ tsp of ground black pepper
  • ½ tsp of smoked paprika
  • ⅛ tsp of liquid smoke
  • 1 cup of cooked couscous (packed)
  • ½ cup of vital wheat gluten
  • ¼ cup of vegan BBQ sauce
  • 2 tbsp of olive oil
  • 4 hamburger buns
  • 4 leaves of lettuce
  • 4 slices of tomato
  • 8 pickle slices
  • 1 avocado (sliced)
  • 8 thin slices of red onion
  • ½ cup of vegan thousand island dressing (optional)
